Grapes: 84% Pinot Noir, 9% Pinot Gris, 5% Meunier, 2% Chardonnay
Vinification: The fruit is divided into two batches; one batch is whole cluster pressed while the other is destemmed and allowed to soak for 2 days before pressing. The pale pink and dark pink juice fractions are then combined and fermented in French oak barrels and egg shaped vessels. Sur lie aging for 6 months.=
Tasting Notes: Raspberry, rose petals, citrus. Crisp, medium-bodied and dry.
Service and Food Pairing Suggestion: Serve chilled. Pair with goat cheese or steamed mussels.
