Vinification: Aged in 600L neutral French Oak puncheons, with an extended élevage of 27 months, and the influence of 35% whole cluster fermentation.
Tasting Notes: A complex nose with notes of white stone fruits, orange blossom water, persimmon, peach stones, sweet elderflower, and butterscotch candy. The palate is fat and powerful, but holds tension with the residual sugar and lively acidity. Medium bodied.
Service and Food Pairing Suggestion: Serve slightly chilled. Pair with our recipef or Premium Maryland Blue Crab with Grand-Père Sauce, or pan-fried foie gras with caramelized onions and white grape, a blue cheese soufflé, mussels with curry, roasted chicken with tarragon, pork roast with pineapple, or a risotto with caveman blue from Rogue Creamery (OR) or Gorgonzola.
