Soil: Silty clay loam over calcareous substrate
Vinification: Long cool fermentation with native yeasts. Extended maceration on the skins. 10 months neutral oak barrel followed by 12 months neutral oak puncheon.
Tasting Notes: Aromas of rose, wet earth, sage, pomegranate, and game. The palate is concentrated with earthy mushrooms, black cherries, tar, and a smooth finish.
Service and Food Pairing Suggestion: Serve at cellar temperature. Pay homage to Barolo and pair with a mushroom risotto or truffle pasta.
