Founder and lead singer of the rock band Nirvana in 1987, Kurt Cobain was an idealist, a committed activist of underground Grunge-Rock music, anti-social and longing to be a stranger. The purity of his message, his despair, and his success in a society torn apart pushed him to leave us 30 years ago today, in 1994. That same day, two years later, I opened my restaurant in Montreal, L'allumette. Dedicated to Quebec's regional cuisine, it honors Quebec producers and the province's Native American culinary influences. This restaurant was composed like a music band, where everyone had their role and their complementary place. A hushed space of white linen, sterling silverware, and fine porcelain.
