Grapes: 100% Cabernet Sauvignon

Soil: Silty loam.

Vinification: The grapes were destemmed and crushed leaving about 10% whole berries. 7 day cold soak, native fermentation. Aged 19 months in 50% new French oak and 50% neutral French oak. Bottled unfined and unfiltered in May 2024. Acid 6.4 g/L, pH 3.73.

Tasting Notes: Floral, spiced, and dark ripe dark cherry. Velvety and round.. Dry and full bodied. Powerful yet elegant.

Service and Food Pairing Suggestion: Serve with a spiced Spanish lamb ragout.
