Grapes: 55% Sauvignon Blanc, 45% Semillon

Soil: Silty loam.

Vinification: Whole cluster pressed and blended. 2 week stabulation before being racked off gross lees. Barrel fermentation. Aged 9 months in neutral French oak. Acid 6.3 g/L, pH 3.33

Tasting Notes: Notes of lemon curd and lime, with floral high tones. A wide and creamy palate is balanced by bright acidity. Medium bodied and dry.

Service and Food Pairing Suggestion: Serve chilled, but the wine will open up beautifully as it warms to cellar temp. Pair with smoked whitefish with creme fraiche. 

Sustainable. 750 ml. 12.1% alcohol by volume.
