Vineyard: Red Willow Vineyard
Grapes: 56% Cabernet Sauvignon, 22% Merlot, 11% Malbec, 11% Petit Verdot
Soil: Calcareous, volcanic soils with an influence of ancient riverbeds.
Vinification: Aged 20 months in 89% new French oak and 11% neutral French oak; aged 10 months in concrete. Unfined and unfiltered. (pH 3.64; TA 6.6 g/L)
Tasting Notes: Black wild fruits, leather, fresh cigar tobacco, cedar, and vegetal notes of black currant leaves, pencil lead. Cherry, chocolate, dried herbs, pepper. Full bodied with moderate tannins.
Service and Food Pairing Suggestion: Definitely your choice for a strong beef stew, red wine with roots vegetable. Pasta a la Bolognaise, Ribeye with red wine sauce and wild forest mushroom (and matches French fries) rack of lamb with mint sauce.
