Vineyards: Las Cimas Vineyard 

Grapes: 100% Gamay

Soil: Las Cimas Vineyard: Franciscan soils layered with quartz and schist. Vineyard in Fountraingrove AVA:  well drained iron rich volcanic soils.

Vinification: Made with partial carbonic maceration before foot crushing whole clusters. Pressed to neutral barrique for 6 months.

Tasting Notes: Fresh wild strawberry, herbs. Aromatic and high-toned. Light-bodied and dry.

Service and Food Pairing Suggestion: Serve with a slight chill. Pair with charcuterie or a mushroom tart.
