Soil: Loam (Sand, silt, clay)

Vinification: De-stemmed and punched down twice a day in open top fermenters. Pressed and put into neutral French oak puncheons, aged 16 months, bottled unfined and unfiltered.

Tasting Notes: Spicy, red berry, rose petal, herbs de Provence, mineral. Umami, dried cranberry, tobacco leaf, long, refreshing finish. Medium bodied and dry.

Service and Food Pairing Suggestion: Serve with cinnamon-based dishes, berry-based sauces, and smoky meats. (Thanksgiving!!!)
