Soil: Fine sandy and clay loams

Vinification: Small open top fermenter with manual punch downs, and minimal handling. Aged 16 months in neutral French oak barrels.

Tasting Notes: Deep, rich, balanced acidity, medium tannins. Red fruit, black fruit, earthiness, spice. Medium to full bodied.

Service and Food Pairing Suggestion: Pair with a Mexican mole.
